It's no secret in our house that sushi is EVERYTHING to my kids. But Scooby Doo is maybe their second favorite thing. I was reading this book, Scooby-Doo and the Samurai Ghost to my son for the one millionth time the other night and realized that Shaggy talks about eating "cucumber and peanut butter sushi rolls" in the beginning on the story.
I decided that was a combo worth trying out. In my opinion, it needs something else to balance the flavor, so I also added some sweet chili sauce. I made it another time and added Hoisin sauce. Both were perfect with the crisp and neutral flavor of cucumber and the richness of the peanut butter. Plus, since we eat vegan sushi, this gives us some added protein.
To make 2 sushi rolls (this is just a quick afternoon snack), I made 1 cup dry sushi rice in my Instant Pot on the rice setting. I used 1 cup dry rice to 1.5 cups water and a pinch of salt. It was done in 12 minutes, and then I stirred in my seasoned rice vinegar and rolled out my goodies. I used peeled and seeded cucumber strips, creamy peanut butter, and a small drizzle of thesweet chili sauce for one roll, and half an avocado for the other roll.
Super quick and easy, plus super delicious.
