Creamy Crockpot Butter Beans
I can't believe I'm typing this, but it was so good, I can't keep it to myself. I made a crock pot full of butter beans/lima beans on Monday and have been eating them all week. So delicious and simple and literally three ingredients if you count salt and water.
I soaked my lima beans overnight, but you can probably skip it and extend cook time. Either way, I used one 2lb bag of driedlima beans and 8 cups water with a generous pinch of salt.
After soaking in the crockpot overnight, I turned it on low and they were ready by lunch time. I've been putting them in wraps all week like a refried bean or similar, but they would make a great protein-packed side dish or addition to a pot pie. The flavor and texture really lives up to the name "butter bean" because they are absolutely silky without any oil or creamy additions.
