Instant Pot
I have the Instant Pot DUO 7 in 1 (you need the 7 in 1 if you want to make yogurt- and I highly recommend making some yogurt!). I use my Instant Pot almost daily for cooking rice, beans, and reheating frozen food.
I thought this was totally unnecessary for years, but I'm so glad I came around because it's now a constantly used tool in my kitchen. I recently got a second liner for it, and I definitely recommend getting an extra liner and an extra sealing ring (because it takes on the smells, so it's good to have a savory sealing ring and a sweet one). |

Air Fryer
I use my Air Fryer daily. One gadget I don't have is a microwave, so this is great for heating up frozen foods like veggie burgers (about 8 minutes on 400 degrees) and cooking up "fries" or tofu in 20 minutes. It's so fun and easy and helps me keep the oil low (I don't really do oil-free, but there are lots of recipes out there if you want to do that).
I highly recommend JL Fields's book, The Vegan Air Fryer, for beginners wanting to get a big range of ideas how to use it, and the group on Facebook, Vegan Air Frying Enthusiasts for trouble shooting and sharing recipes. |

Spiralizer
After trying out several brands and styles of spiralizer, I'm very happy with the Inspiralizer as my chosen spiralizer. Great for cooked and raw applications for veggie and fruit noodles. It's also a great way to uniformly and quickly slice veggies for salads, sandwiches, or Buddha/Hippie Bowls.

Masticating Juicer
The story of how I got my Champion Juicer is magical. I was buying something at a thrift store, and a woman was donating it before moving out of state. My mom was visiting and started chatting with the woman, and asked if she could have the juicer. At the time, I didn't know how special it was, but I have been eternally grateful since. It's a pricy juicer, and I know it's not realistic for everyone, but a lot of times you can find one used. Masticating juicers work differently than centrifugal juicers, so recipes using the "blank" screen need to be made in this type of juicer or a YoNanas machine or Magic Bullet Dessert Bullet.

Popsicle Molds
I love popsicle molds that use wooden popsicle sticks, because I'm always losing the plastic sticks with cute popsicle molds (I blame young kids, but I'd probably lose them anyway). These two molds (a silicone one perfect for ice cream bars and a regular plastic mold for classic pops) have been great for me, but there are so many fun ones out there!

Ice Cream Maker
My Cuisinart ice cream maker was a great wedding gift, and since we live in the south, I use it often. My best basic ice cream is simply a small can of coconut cream and a can of coconut milk plus whatever flavors and sweeteners tickle my fancy, but I also have specific recipes too!
My secret tip for this ice cream maker is to keep the freezer bowl in the freezer at all times so I'm ready to make ice cream whenever the idea strikes my fancy. If you have a deep freeze, they stay extra cold and are ideal for this, but otherwise just try to make space in your freezer. |

Blender
I have three blenders, plus a Cuisinart food processor, and use them all pretty regularly. For my high speed blender, I have a Vitamix, but I also have a NutriNinja for quick or small batch stuff (it doesn't get as smooth as the Vitamix, but works well if I just want a small batch of something blended). I also have an immersion blender for things like mayo.
