Once upon a time, probably 6-7 or more years ago, I came across a video for vegan banana bread. It turned out perfect. I made it a million times, I made it with gluten-free flour for my GF friends, and it continued to be perfect. I made it cake pans and frosted it in layers for my daughter's first birthday...
This banana bread recipe is the thing of legends. Then I went a while without making it, for whatever reason, and I couldn't remember the ratios. I searched high and low and middle, and I couldn't find the recipe. I'd love to credit the creator of the recipe, but the video is gone and I can't remember her name and I don't know if she has a blog anymore. I asked in a parents group, frantic, because I knew the woman who created the recipe video's husband was in the group. He gave me the recipe again. Then I made it a bunch and didn't need the recipe and cooked it all the time again. A friend just asked for the recipe and I couldn't find it anywhere. I ended up searching the archives of the vegan parenting group and found my post from the last time I lost it. So, just so I don't lose it again, should that post ever disappear, and so that all of you can make the best banana bread ever, here it is: 2 bananas (way ripe, of course) 2 Tbsp oil 1/2 cup maple syrup 1/2 cup applesauce 2 cups flour 1 tsp baking soda 1 tsp baking powder *option, a dash of vanilla and a pinch of salt *also optional, nuts, dried fruit, and/or chocolate chips Mash/mix all your wet ingredients and then fold in the dry in a nice thick paste. Pour into greased loaf pan. Bake at 375 for 35 minutes (or I've made it into muffins and it cooks in about 20 minutes in a greased cupcake pan).
