Since I can't just sit around crying into my heart shaped bowls that the newVegan Ben and Jerry's flavors haven't come to my local stores yet, I decided to make some chocolate chip cherry ice cream tonight.
In blender, I combined 1 can coconut milk, 1 bag frozen cherries, about 1 cup soy milk, 1 tsp vanilla, and maple syrup to taste until it was smooth.
Then I poured that into my Cuisinart ice cream maker and let it go for about 15 minutes until it was thick and creamy. It made 3 bowls of ice cream that we topped with Enjoy Life chocolate chips.
I used to think the ice cream maker was kind of a silly gadget to have, but I've made some really amazing ice creams in the last year or so. This is maybe my favorite, though. Especially now that we live in a small town with fewer options for vegan ice creams, it's earning it's keep for sure.
