1 lemon (Meyer has best flavor)
1 bulb fennel
3 cloves garlic
1 can great northern beans, drained
2 cups vegetable broth
1/4 cup white wine
1 tsp salt (adjust based on broth saltiness)
1 tsp dried thyme
fresh parsley and red pepper flakes to garnish.
Quarter and thinly slice the lemon, onion, and fennel. Mince garlic. Add everything (except garnish) to Instant Pot pressure cooker and set to 6 minutes manual. If you don't have a pressure cooker, cook at medium heat covered for about 1/2 hour.
